Any hotel where you have a view of the falls. They might be expensive last minute.. But look at groupon too, you might get some deals.

american side time and money brokka. go to the canadian side if you really want to see the falls. once you are there, after doing usual rides like journey behind the falls, maid of the mist (I think they have a different name now) etc.; go to Niagara-on-the-lake via wine route. the route is along the niagara river bank and very scenic. nice restaurants, great ice cream etc. Also go to the botanical gardens where they have butterfly museum.
if you have two days, you can do these things leisurely. Avoid weekends if you can..
