Pasta: Desi Style

Boil pasta for 10-15 minutes
you can find lot of pasta sauces in costo/sfaeway/walmart both veggie and non veggie
If u want to make it spicy add more mirchi,peppers
try to to olive oil so that it tastes good

cooking instructions:
1.fry mirchi first,add boiled pasta then add pasta sauces(if u want u can add some other mixed veggie).add salt n pepper.make sure to cook it for 5-100 minutes add some cheese if u like

Veg fried Rice

Take a rice cooker.

put 1 measur rice and 1/2 measure of kandipappu

Add 2 teaspoons of oil.

Add enough mixed vegetables, make sure you add from 2 types of packets

pour enough water.

Add some turmeric,salt,karam, samabar/ rasam or edo masala for taste..

cook it in rice cooker.

Masala Gravy:..VEG

1) Fry some chillies ( I tried with Jalapenos) in Oil.. use oil generously.. Not deep fry though...

2) Grind Nuvvulu (Til).. I dont know what they call it in english.

3) Tamarind pulusu... what i do is boil some tamarind in Microwave.

4) Add Nuvvula podi.. Tamarind.. Chitikedu Garam Masala... salt.. and cook for 20 Min..

Prawn Tomato/Gongura Gravy

first do as how I said up to 13th step

14. tomatoes/gongura cut sesikondri ekkuvaga or proportionate ga
15. onions + talimpu + garlic paste tho kailpi baaga fry cheyandri
16. once tomatoes/gongura soft and mixed ainaaka appudu salt + mirshi powder add sesei malla few min fry seyandri.
17. Proportionate ga water kalipi gravy ga chesukondri
17. baaga mix Inaaka appudu baaga 13th step stage lo unna prawns loki ee friedy tomato chikkati mixture ni kalipi
baaga fry seyandri still in same low flame lo.
18. Konni minutes Inaaka choose aa prawns + gravy baaga mix Ipoi untundi.

19. inga daanipaina kotti mera etc esi inga rice tho kalipi tinta unte


Note:

chikkaga undaali ante takkuva water esukonidri.
spicy ga undaali ante ekkuva mirshi powder & garam masala add sesukondri mee range ki taggattuga

Prawan fry

1. Remove the shell and clean prawns with water.
2. Empty fryingpan stove meeda etti konchem heat seyandi.
3. Konchem sepu ainaaka aa shell removed prawns aafrying pan loki posi fry cheyandi
4. Konni nimishaalu ainaaka prawns lo unde water bayataki vastadi and prawns chinna circle ga untadi. (MAKE SURE THAT PRAWNS WILL BE SMALL CIRCLE AND NOT HAVING WATER IN IT).
5. Appudu frying pan ni stove meeda nunchi teesi aa prawns ni matram filter chesi water basin lo poseyandi.
6. Malla frying pan ni baaga kadigi malla heat cheyadam shuru seyandri.
7. baaga dry Inaaka appudu Oil + turmeric powder konchem esi few seconds ainaaka appudu ee filtered prawns ni andulo veyandri.
8. baaga oil lo fry cheyaali almost few min alaage medium flame lo fry cheyandri.( malla water vaste daani filter cheyandri)
9. Now you see the prawns are small circle rubber laaga konchem gattiga konchem soft ga untadi and brown color loki raavali.
10. cut onions sannani teega laaga appudu adi kooda existing fryied prawns tho kalipi fry seyandri.
11. appudu inka salt, mirshi powder, garlick mix, masala mix untadi avi add seyandri.
12. Malla few minutes baaga fry seyandri.
13. malla kaavali ante inga baaga oil posi inga baaga fry cheyandri.
14. meeku cryspy ga kaavali ante rice flour (i.e. biyyam pindi) proportionalte ga add seyandri.
15. Low flame lo fry setta undandi. Final ga brown color loki vasse tanta varaku soosi dinchi tinandi

Dum biriyani

Follow to step 7 step above.

8.a : Separate pot heat 8-9 cups water with 1 chilly, 2 cloves,a small stick of cinnamon and 1/2 tsp salt

9.a : Add the rice and let it boil till half done - paluku undagane turn the heat off and strain the water off.

10.a : Add 1 cup of water to the chicken and let it boil(Ensuring 1.5-2 cups liquid in the mix)

11.a : spread the chicken in and even layer - cover it with tomato slices evenly and spread the cilantor and mint on it -cover and cook for 1-2 mins.

12.a : Spread the rice on the chicken - do not mix- cover with a tight lid and turn the heat down to low.

13.a : Cook for 10-15 mins and turn off. Leave the lid on till it cools down a bit and enjoy

Biriyani recipe :

Chicken : 2- 3 lbs cut
Basmati : 3 cups

Onions : 1 large cut into thin slices/rings
Green chillies : 8-10 depending on spice tolerance, slit
Ginger-garlic paste : 1 heaped tablespoon
Cilantro - chopped : 1/4 cup
Mint(Pudina) -chopped : 10-15 leaves


TOmato : 1 large cut into slices
Yogurt : 1/2 cup

Biriyani masala :
Cloves (lavang ) : 10-12
Cinnamon - dalchini : 2 inch stick
Elaichi : 1
(Crush the above lightly to pieces - otherwise the cloves will explode in oil)

or you could use 2 tsps of store bought biriyani masala.


Bay leaf - biriyani aaku : 4-5
Chilli powder ; 1/2 tespoon
Turmeric : 1/2 teaspoon
Salt to taste

Two ways to cook : Regular and Hyderabdi dum biriyani. First few steps are common

Regular

1. Apply chilli powder, turmeric to the chicken and leave aside.

2. Wash and soak the rice in water

3. Heat oil with a little butter/ghee in a large thick vessel/cooker.

4. Add the bay leaf and biriyani masala fry for a few seconds

5. Add onions and chillies, add a little salt and fry till transparent

6. Put in the ginger garlic paste and fry till the raw flavor is gone

7. Add the yogurt and cook for 2 mins on high heat.

8. Add tomato, cliantro and mint and fry for 3-4 mins

9. Put in the chicken afer the chicken heats thru,cook on medium heat for 8-10 mins-checken should be cooked thru.Add salt as needed.

10.Put in 4 cups of water and bring to boil- check salt and spice in the water - you can add a chilli or salt if needed.

11.Put in the rice,bring to a boil and cover the vessel.Cook on medium heat for 10-mins and turn it off.If using pressure cooker - do not use the weight.Or you could transfer the whole thing to a rice cooker and let it cook.
